Day 2: Morning Glory Part 2

After the market, we returned to the restaurant for the class.  Hands down the best cooking class I have ever taken.  We each had our own stations.  Ms Lulu was so excited to share with us the secrets of Vietnamese cooking down to the detail of why they use certain ingredients and the health benefit of eating each type of green.
Lulu, our instructor, teaches up to 5 classes a day.  She has been working for Ms Vy, owner of Morning Glory since she was 14 years old and knows all the inside tips.
Dish #1: Cabbage leaf parcels with shrimp mousse in vegetable broth.  Best soup ever.
Dish #2: Rice paper roll.
Dish #3: Banh Xeo- Crispy Hoi An Pancakes.
Dish #4 and 5: BBQ Chicken and Lime Leaf AND Green Mango Salad
We ran into Lulu later that evening as she rushed out for an evening cooking class at another of Ms Vy's 5 restaurants!
